2 tsp sweet paprika
2 tsp chili powder
1 tsp garlic powder
1/2 tsp dried oregano
1 tsp salt
1 tsp pepper
2 racks pork baby rack ribs (approx. 5 lbs total)

Directions:
Directions:
Preheat oven to 275º
Mix paprika, chili powder, garlic powder, oregano, salt and pepper in small bowl
Run paring knife down length of bone side of each rack of ribs to split the skin
Season each rack of ribs with rub mixture
Arrange ribs, meaty side down, in a single layer on a baking sheet
Roast approximately 3 hours, turning half way through, until very tender
Serve alone or with favorite BBQ sauce
