8 medium potatoes
6 eggs
1/3 medium yellow onion
1 1/2 cup mayonnaise
5 rounded Tbsp spicy brown mustard
3 Tbsp sweet pickle juice
1-2 tsp curry powder
Salt and pepper to taste

Directions:
Directions:
Boil potatoes with skin on
Peel potatoes and dice (I refrigerate potatoes for a few hours after boiling..it makes them a lot easier to peel and cut)
Boil eggs, peel and grate
Finely chop onion
Mix mayonnaise, mustard, pickle juice and curry powder
Add mixture to potatoes, eggs and onions
Mix well and add salt and pepper to taste
Chill before serving
