Pastry for 4 pie crusts
12 medium granny smith apples
2 cups sugar
2 Tbsp flour
2 Tbsp lemon juice
2 tsp cinnamon
1/4 cup unsalted butter

Directions:
Directions:
Preheat oven to 375º
Make pastry and divide in half
Roll half of pastry to fit a 10"x15" jelly roll pan, allowing a 1/2 inch overlap (to get dough in pan roll it back onto the rolling pin and then roll back onto the pan)
Peel, core and slice apples and mix with lemon juice
Mix sugar, flour and cinnamon in small bowl and pour over apples and mix well
Place apples on pastry and dot with butter
Roll out remaining pastry to fit pan and cover apples (see above)
Seal crust
Prick top crust with fork to vent
Bake approximately 1 hour or until crust is golden brown and filling is bubbling

Lemon Drizzle Icing
2 Tbsp lemon juice
1 cup sifter powdered sugar

Mix lemon juice and powdered sugar until smooth and drizzle over apple slices while still warm
