"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Round Steak with Gravy, by Pearle Clark, is from Clark Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
3 lb. round steak, 1 inch thick 1/3 c. all purpose flour 3 tbsp. shortening 1 envelope onion soup mix 1/2 c. water 1 can cream of mushroom soup
Sprinkle one side of meat with half of flour and pound in (using mallet or edge of heavy saucepan). Repeat for other side of meat. Cut into 6-8 serving size pieces. Melt shortening in large skillet and brown meat slowly and thoroughly over medium heat for 15-20 minutes. Sprinkle onion soup mix over meat. Mix water and soup; pour over meat. Cover tightly and simmer until tender (1 1/2 to 2 hours). Add a little water if needed. Remove meat. Heat the remaining gravy mixture to boiling; stirring constantly. Pour over meat.
This can be cooked in crock pot - omit browning step. Put steak, onion soup mix, water, and soup in crock pot and cook for 8-10 hours.
