1 Head of Garlic
2 Tablespoons of extra-virgin olive oil
Salt and freshly ground pepper, to taste

1. Preheat oven to 400º.
2. Cut the top of the garlic to expose the cloves. Place the head of garlic on a piece of aluminum foil and drizzle the olive oil on top. Season with salt and pepper. Wrap with the foil and roast in the preheated oven until the garlic cloves can be squeezed out easily. This takes about 45 minutes to one hour and serves about 8 to 10 people. Spread over fresh Italian bread.
