2 c. sugar
1 lb. butter
6 eggs
5 c. flour
2 1/2 ounces lemon extract
2 c. white raisins
1 c. pecans
1 t. soda dissolved in 1 T. water

Directions:
Directions:
Soak raisins in lemon extract. Cream butter, add sugar gradually. Add eggs one at a time, beating thoroughly after each addition. Add flour and soda. Do not over beat when adding flour. Add raisins and nuts. Bake 1 hour 15 minutes at 250 in three ungreased loaf pans.

My friend Gayla gave me this recipe. One chilly winter day I popped over to her house for a visit. (Ah, the joy of being neighbors!) She served me this bread with hot tea... so tasty, especially for lemon lovers such as myself.
Gayla says that when wrapped tightly in foil this bread lasts forever and tastes better with age.
