2 teaspoons vegetable oil
½ to 1 pound of hot or sweet Italian turkey sausage (remove casing)
1 red bell pepper, seeded and chopped
6 scallions, sliced
1 teaspoon chili powder
½ teaspoon ground cumin
1 can stewed tomatoes
1 can black bean
1 can chickpeas
salt and pepper to taste
flour tortillas
reduced fat cheese

Directions:
Directions:
Preheat oven to 350 degrees.

In a large skillet, add the oil. Sauté sausage until thoroughly cooked and breaking into small pieces. Add bell pepper and scallion stirring until browned. Add cumin and chili powder. Cook for about a minute. Add tomatoes, black beans, and chick peas. Turn down heat to low and simmer for 5 minutes.

Spray glass pan with non-stick spray. Spoon mixture into tortilla and roll into tortillas placing in pan. Sprinkle enchiladas with cheese. Bake until heated through and cheese is melted. Let stand for about 5-10 minutes before serving.

Left over mixture is great in pita bread.
