Ingredients:  
1 1/2 to 2 lbs. ground beef
1 carrot, grated
1 potato, grated
1/2 onion, finely chopped
salt & pepper to taste

Directions:
Directions:
Mix all ingredients. Form into meatballs (about the size of walnuts) and brown on the stovetop. Place in baking dish and cover with 2 cans cream of mushroom soup (or cream of chicken or celery). Bake at 350 degrees 20 or 30 minutes. Good over warm rice.
