Smoked salmon, sliced or broken into chunks
Whipping cream
Prepared horseradish
Red onion, finely diced
Capers, drained
Good crackers (water crackers, multi-grain --
whatever strikes your fancy)

Directions:
Directions:
Whip the cream until stiff. Whip in horseradish to taste (for a pint of whipping cream I use a whole small jar of horseradish).

Build the appetizers by putting a dollop of whipped cream mixture on a cracker. Top with a few chopped onions, capers and the salmon. Delicious!
