1 lb. orzo
1 red onion, diced
15 sundried tomatoes, diced
15 Kalamata olives, chopped
6 cloves garlic, minced
5 stalks celery, diced
1/4 cup toasted pine nuts
1 lb. spinach, chopped
1 4-oz. package feta cheese
4 T. olive oil
4 t. wine vinegar
2 t. soy sauce
Salt and pepper

Directions:
Directions:
Cook orzo, drain and cool. Put onions, tomatoes, olives, garlic and celery in a large bowl and toss to mix. Add spinach, feta and pine nuts, then orzo. Gently mix. In a separate bowl, whisk together olive oil, vinegar, soy sauce, salt and pepper. Pour dressing over salad and toss.
