3 or 4 firm green tomatoes
Salt
2 cups self-rising flour or cornmeal
1 to 2 teaspoons pepper
1 cup buttermilk
Vegetable or peanut oil for frying

Directions:
Directions:
Slice tomatoes in 1/4 - 1/2 inch slices. Lay out on a pan and sprinkle with salt. Place in a colander and allow time for salt to pull the water out of tomatoes, about 30 minutes. In a skillet, heat the oil for deep-frying over medium-high heat. Dip the tomatoes into buttermilk, then dredge them in flour. Deep fry until golden brown.

This is one of Rachael's favorite foods. I grow heirloom tomatoes from seed, and during the summer, I fix fried green tomatoes, with homemade Ranch dressing.
