3 or 4 firm Green Tomatoes cut into 1/2 inch slices
Kosher Salt
1/4 teaspoon fresh ground Black Pepper
2 cups Self Rising Flour
2 cups Panko Crumbs
1 cup whole buttermilk or a thick mixture of Milk and Sour Cream
3 Eggs
Vegetable oil for frying

Directions:
Directions:
Place tomato slices in a colander and sprinkle generously with salt and pepper. Allow to drain for 1 hour or longer. In a skillet, place oil about 1 inch deep and heat over medium-high heat. Combine buttermilk and eggs in a shallow bowl. In separate bowls, place panko crumbs and flour. Dredge tomatoes in flour mixture to coat both sides. Dip the floured tomatoes into buttermilk mixture, coating both sides, then press into panko crumbs on both sides. Deep fry for about two minutes on each side, or until golden brown. Serve with Ranch Dressing.

This is one of Rachael's favorite foods. I grow heirloom tomatoes from seed, and during the summer, I fix fried green tomatoes, with homemade Ranch dressing and pimento cheese.
