1 ½ pounds boneless chicken
2 packages (6 oz. each) bean thread noodles
1 large white onion
1 bunch green onions
½ teaspoon black pepper
1 teaspoon fish sauce
Chili sauce (dash)
1 tablespoon soy sauce
4 large eggs

Directions:
Directions:
Soak bean thread noodles in very hot water about 15- 20 minutes. Drain well and place in large mixing bowl. Chop onions, set aside. Scramble eggs to dry stage and chop into strips.
Shred chicken into strips. Stir fry chicken in 2 tablespoons hot oil until done (5 minutes). Add onion, spices, and stir fry. Add eggs, mix in noodles and serve hot. Makes 4 to 6 servings.
