1 1/4 C sugar
2 Tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 1/2 C. grated carrots
1 C. grated apple
1 C. raisins
1/2 C. chopped walnuts
1/2 C. coconut
3 eggs
1/2 C. vegetable oil
2 tsp. vanilla

Directions:
Preheat oven to 375. Mix together first ten ingredients. Add eggs, oil, and vanilla. Mix until wet. Pour into well-greased muffin tins and bake for 15-20 minutes.
