7 1/2 cups water
3 lbs. large fresh shrimp unpeeled

2 small red onions sliced
1 yellow bell pepper sliced

1 cup vegetable oil
1 cup red wine vinegar
3 tbsp. sugar
1 tbsp. lemon rind grated
3 tbsp. fresh lemon juice
1 tbsp. white wine Worcestershire sauce
1 tbsp. hot sauce
1 tbsp. Dijon mustard
1/2 tsp. salt
2 garlic cloves pressed

1/2 cup fresh basil chopped

Directions:

1. Bring water to a boil and add shrimp cooking 2 to 3 minutes until shrimp turn pink.
2. Drain and rinse with cold water and peel and devein shrimp if desired.
3. Layer shrimp, red onion slices and bell pepper slices in an airtight container or plastic bag.
4. Whisk together vegetable oil and the rest of the ingredients except the basil and pour over shrimp.
5. Cover and chill 24 hours stirring occasionally.
6. Stir in chopped basil one 1 hour before serving.

Fantastic salad or appetizer but you have to make it the night before. Put mixture in a glass serving dish because it is beautiful to look at. You can substiture the basil with cilantro if you like.
