1 tbsp. oil
6 rashes chopped bacon
1 sliced leek
3 diced potatoes
3 cups of chicken stock
375ml evaporated milk
black pepper
fresh dill (herb)

Directions:
Directions:
Heat oil in a pan, add bacon, leek and potatoes.
Cook over a moderate heat for 5-8 minutes or until all the potatoes are crisp. Add chicken stock and evaporated milk. Season to taste with black pepper and simmer for 30 minutes. Remove from heat and depending on how you like the consistency of your soup you can a) serve and garnish with dill or b) put through the blender for a smoother consistency then serve and garish with dill.
