6 medium brushed potatoes
600 ml cream
1 large brown onion
3 cloves garlic, crushed
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh parsley
¼ cup grated Parmesan cheese
1 teaspoon sweet paprika
Sea salt and freshly ground black pepper

Directions:

1. Pre-heat oven to 200 degrees.

2. Peel and dice onion and place into a large flat baking dish.

3. Peel potatoes and cut into cubes. Add to dish along with cream, garlic, herbs, salt and pepper. Stir to combine.

4. Sprinkle with cheese and paprika.

5. Cover with foil and bake for ¾ hour.

6. Remove foil and continue baking for a further 15 minutes.

7. Potatoes are ready when golden brown and tender.
