"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
1 lb fresh green beans
1 TB. red wine vinegar
1/3 c. fresh basil (not sure that I have ever used that much)
salt & pepper
2 green onions
1/3 c. Romano cheese, shredded
1 TB. olive oil

Directions:
Directions:
Cook green beans until tender crisp - cover with water and boil 10 minutes. Drain and rinse in ice water. Mix all ingredients together. Serve cold. HINT: I like to buy a brick of Romano or Parmesan cheese and freeze. It grates really well that way and is so good. Just refreeze after grating. It keeps a very long time in the freezer.

Personal Notes:
This recipe comes from my mother's friend. I had it in Lincoln when I was taking care of my mother after her heart surgery. It is really good.
