Batter:
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. ginger
1/2 tsp. nutmeg
1 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt

Frosting:
1 (8 oz.) pkg. cream cheese
1/2 tsp. vanilla
4 tbsp. butter
1 1/2 c. powdered sugar

Preheat oven to 375. Mix the batter ingredients in large bowl. Pour into small cookie sheet. Bake 12-15 mins. Mix frosting ingredients in mixer. Beat until smooth. Spinkle a clean dish towel with powdered sugar. Turn baked pumkin onto towel. Using the towel roll pumkin up. Let sit until cooled. Once cool gently unroll pumpkin. Spread frosting evenly over pumpkin roll and gently roll again. Wrap with plastic wrap and refrigerate. When ready serve sprinkle with poweder sugar.
