spinach frozen chopped 16 ounces
spring onions minced (w/tops) 3/4 cup
garlic, minced 6-8 gloves
olive oil1 teaspoon 1/2 teaspoon
cottage cheese, drained 1 cup
feta cheese crumbled 4ounces
eggs lightly beaten 2
cilantro dried 1 1/2 tablespoon
pepper black coarsely ground 1 teaspoon
Parmesan cheese finely shredded 1/4 cup
bread crumbs fine 1/4 cup

Spray a 9" baking dish with cooking spray, set aside Saute onion and garlic in olive oil and butter until soft.
Cook the spinach in microwave for 5 minutes, stir spinach, cottage cheese, feta cheese, eggs,cilantro and black pepper into onion and garlic mixture. Mix well and spoon mixture into baking dish. Combine Parmesan cheese and bread crumbs and sprinkle over spinach mixture. Bake, uncovered, at 350º for 35 to 45 minutes or until a knife inserted in center comes out clean.
