2 lb pork tenderloin
Sea salt & freshly ground pepper to taste
2 tbsp chopped fresh thyme
2 tbsp chopped fresh rosemary
1 tbsp butter
1 c apple cider, divided
4 small granny smith apples, peeled, cored, & sliced inch thick
2 tbsp honey
2 tbsp balsamic vinegar

Directions:

Preheat oven to 400 degrees. Rinse pork, pat dry. Season with salt and pepper. Coat on all sides with herbs. Melt butter in a large ovenproof skillet. Add pork, cook over medium-high heat until well browned on all sides. Add cup cider to the skillet and cook until most of the liquid has evaporated. Add apples to the skillet. Stir together the remaining cup cider, honey, and vinegar; pour over the pork and apples. Place skillet uncovered and cook 20 25 minutes.
