Cold cooked jasmine rice (or other) 2cups
Can of pineapple tidbits, drained 14 oz
Can of water chestnuts drained and chopped 8 oz
Diced celery 1/2 cup
Diced red pepper 1/2 cup
Diced red onion1/2 cup

Lime Dressing:
Lime juice 3 tbsp
Canola oil 1 tbsp
Low sodium soy sauce 1 tbsp
Sweet chili sauce 1 tbsp

Toss first 6 ingredients in a large bowl.

Lime dressing: combine first four ingredients in a jar with a tight fitting lid. Shake well. Drizzle over rice mixture. Toss
