1 lb. ground beef
1 sm. onion, chopped
2 c. crushed taco chips
1 (1 1/4 oz.) pkg. taco seasoning mix
1 (16-oz.) can whole tomatoes, undrained
1 c. (1/2 pt.) sour cream
1 c. (4 oz.) shredded cheddar cheese

Crumble ground beef and onion into microwave-safe glass pie plate. Microwave on High, uncovered, 5 to 6 minutes or until no longer pink, stirring once to break meat into small pieces, drain. Layer 1 cup taco chips on bottom of 1 1/2 quart microwave-safe casserole. (Mom used square pyrex dish) Cover with ground beef, dry taco seasoning mix, tomatoes (cut into quarters), sour cream and cheese. Top with remaining taco chips. Microwave on High, uncovered, 5 to 6 minutes to or until cheese melts and casserole is heated through, rotating dish once.
