Pork Chops:
1/3 cup Olive Oil
2 T. blackened Steak Seasoning
2 tsp. Garlic Powder
1 large, thinly sliced Onion
6 boneless (1 in. thick) Pork Loin Chops

Corn Mango Salsa:
2 cups Corn
1 medium, peeled and diced Mango
1/2 cup diced Red Bell Pepper
1/4 cup chopped Red Onion
1/4 cup Lemon Juice
2 T. Canola Oil
1 T. fresh chopped Cilantro
2 T. fresh chopped Mint (optional)
1/4 tsp. salt

Directions:
Directions:
Combine all pork chop ingredients (except pork chops) in bowl. Pour over chops in a resealable bag and marinate for 12 hours. Drain and grill chops over medium heat for 14-18 minutes or until they reach 160º, turning once.

In a medium bowl, combine all ingredients; toss gently to mix. Serve over pork chops.
