1 chicken or chicken pieces
Ice water
1 C plain non-fat yogurt
1 C dried Italian bread crumbs
1 C all-purpose flour
1 T Old Bay seasoning
1/2 tsp garlic powder
1/2 tsp Creole seasoning
1/2 tsp dried thyme
1/2 tsp dried basil
1/2 tsp dried oregano
1/8 tsp black pepper
Dash cayenne pepper

Preheat oven to 400. Spray baking sheet with PAM. Put chicken in large bowl of ice water. Put yogurt in medium bowl. Set both bowls aside. Add remaining ingredients to a large zip lock bag and mix well. Coat each piece chicken in yogurt and one by one put in breading zip lock and shake to coat thoroughly. After breading each, place on baking sheet. Spray the chicken lightly with PAM. Place the baking sheet on bottom shelf of the oven and bake for one hour, turning the pieces every 20 minutes to allow for even browning.
