2 lb. sweet potatoes, cut into 1 1/2 in. pieces
3 lg. cloves garlic, minced
1 T fresh, chopped rosemary
2 T olive oil
1/4 c toasted chopped pecans
2 T fresh, minced parsley
1 t salt
1/4 t black pepper

Directions:
Directions:
In roasting pan, combine sweet potatoes, garlic, rosemary, and oil. Toss to blend well. Roast at 375 for 50 minutes, stirring occasionally. Just before serving, sprinkle with nuts, parsley, salt, and pepper.

Makes 6 - 8 servings
