3 T butter or margarine
3 T all-purpose flour
1 1/2 t salt
1/8 t pepper
2 C milk
1 C shredded cheddar cheese
8 C thinly sliced, peeled potatoes
1/2 C chopped onion

Directions:
Directions:
In saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil, cook and stir for 2 minutes or until thickened. Remove from heat and stir in cheese until melted. Add potatoes and onion and gently toss. Transfer to a greased 2 quart baking dish. Cover and bake at 350 for 1 hour. Uncover and bake 30-40 minutes longer or until the potatoes are tender.
