4 eggs
1 1/2 cup Wesson oil
2 cups white sugar
1 cup chopped pecans
2 cups plain flour
1 tsp salt, (I only use 1/2 tsp.)
2 tsp baking soda
2 tsp cinnamon
3 cups fine grated carrots

Icing
1 box confectioner's 10x sugar
1 8oz. package cream cheese
3/4 cup butter or margarine
2 tsp vanilla
1 cup chopped pecans

(fewer nuts may be used in cake and icing if desired)

Directions:
Directions:
slightly beat eggs in mixing bowl.add all ingredients
except nuts and carrots, mix well,add nuts and carrots
place in 2 round cake pans, (you can also use a 9 by 13 pan if you choose) bake for 1 hour at 350. Cool before icing.


Icing
Let butter and cream cheese come to room temp.
mix all ingredients well, add nuts last.
Spread icing on both layers of cooled cake.
