1 1/2 c. sugar
1 c. vegetable oil
3 eggs
2 c. all purpose flour
1 1/2 tsp. cinnamon
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. nutmeg
3 c. shredded carrots
1 c. chopped nuts
1 c. raisins

Heat oven to 350. Grease and flour 13x9x2 pan. Mix sugar, oil, and eggs in a large bowl until blended. Beat 1 minute. Stir in remaining ingredients except carrots, nuts and raisins. Beat 1 minute. Stir in remaining ingredients.
Bake 35-45 minutes or until wooden toothpick comes out clean from center.
Frost with cream cheese frosting. Refrigerate.
