Ingredients:  
4 or 5 medium sized potatoes, boiled
1 Tbsp. butter
4 egg yolks
3 Tbsp. sour cream
1 onion, grated
2 Tbsp. butter
3 Tbsp. flour (heaping)
salt and pepper

Directions:
Directions:
Mash hot potatoes, add melted butter. Beat egg yolks with sour cream and add to potatoes. Brown onion in butter and add to potatoes. Add flour and seasoning. Beat thoroughly. It should look like soft yeast dough. Fold in beaten egg whites. Drop by spoonfuls into butter or deep fat and fry to delicate brown.
