2 tablespoons olive oil
1/2 cup chopped carrots
1/2 cup chopped celery
1/2 cup chopped onions
2 garlic cloves, chopped
1 to 2 cans Mexican style Rotel
3 cans black beans
1 can Mexican style corn
1 can chicken broth
1/4 cup fresh cilantro (optional)

Directions:
Directions:
Sauté onions, garlic, carrots, and celery in a large pot in olive oil, until tender
Add the remaining ingredients except the cilantro and heat to a boil; reduce heat and simmer for 20 minutes
Top with a dollop of sour cream and cilantro if desired
