2 tbsp. vegetable oil one onion minced 1 tbsp. minced garlic 4.5 oz can diced jalapeņo pepper 15 oz canned black beans 1 1/2 cup shredded mozzarella cheese 1/2 cup sour cream 1/2 tsp cumin 1/4 tsp cayenne pepper 1/2 cup feta cheese salt and pepper to taste
Heat oil on medium. Add onion, garlic, and jalapeno for about 3 minutes. Add beans and smash with spoon about 2 minutes. Remove from heat, stir in mozzarella, sour cream, cumin and cayenne. Season with salt and pepper, top with feta cheese
