4 cans (Del Monte) Summer crisp corn (drained)
1 red bell pepper (chopped) 1 green bell pepper (chopped)
1 orange bell pepper (chopped) 1 jar pimentos (drained)
4 scallions (chopped) 1 jalapeno pepper (chopped)
1 bunch cilantro

Directions:
Directions:
Combine all ingredients in serving bowl and toss with dressing (recipe follows)

Dressing: Combine cup olive oil, cup vegetable oil, cup red wine vinegar
2 tbsp lemon juice, 1 tsp salt and tsp pepper
