2 cups (14 oz. each) diced tomatoes
1/2 red onion
1/2 jalapeņo, seeds removed
1 clove garlic, minced
Cilantro
1 tbsp. chipotle seasoning (optional)

Directions:
Directions:
Combine all ingredients into a food processor. Blend until desired consistency.

For extra heat, use diced tomatoes with chilies or south-western seasonings. Also, you can keep the jalapeņo seeds.
