3/4 c. pre-sifted flour, 3/4 c. sugar, 1 c. egg whites (8 large) 1/4 tsp salt, 1 tsp cream of tartar, 1/2 c. sugar, 1 tsp vanilla, 1/4 tsp almond extract.

Pre-heat oven to 375ºF (moderately hot) An 8" or 9" tube pan is require for this cake. Do not oil or grease.
Measure flour without sifting; add 3/4 cup sugar and stir thoroughly to blend.
Measure egg whites into mixing bowl (about 2-quart size) add salt and cream of tartar; beat until foamy. Add the 1/2 cup of sugar gradually, continuing to mix until mixture is glossy and holds soft peaks. Fold in flavorings.
Sprinkle flour-sugar mixture over egg-sugar mixture in four additions, folding in gently with rubber scraper until flour disappears after each addition.
Turn into ungreased tube pan and cut through batter gently with a knife to remove large air bubbles.
Bake 35 to 40 minutes. Invert pan until cake is cool, about 1 hour. Loosen cake with spatula and shake from pan.
