1 lb. of ground beef
1/2 lb. of ground pork
Medium onion
Green bell pepper
Taco seasoning
Corn oil
Corn tortillas
2 cans of cream of chicken soup
2 cans of green chilies
2 small cans of evaporated milk
Grated cheese-your choice
Chili powder
Cumin

Directions:
Directions:
Chop onion and green bell pepper, add to the beef/pork mixture and brown. Season with chili powder, cumin and taco seasoning packet and then drain the meat. In HOT corn oil, soften tortillas one by one, just for a few seconds. Dry of excess oil with paper towels. Roll meat in the tortillas and line the pan.

For sauce:
Bring cream of chicken soup, green chilies and evaporated milk to a boil (not a hard boil) stirring frequently to keep from burning the bottom. Pour over the enchiladas and cover in grated cheese. Place in pre heated oven at 350 degrees until the cheese is bubbling.
