1 med package elbow macaroni
2 c fresh bread crumbs
2 c cubed sharp or extra sharp cheddar cheese
2 tsp.. minced parsley (fresh is best)
5 tsp.. or 1 jar diced pimentos
2 Tabs.. melted butter
2 1/2 - 3 c scalded milk
2 tsp.. salt & 1/4 tsp.. pepper
2 eggs well beaten
3 Tbls.. minced onion

Directions:
Directions:
In greased casserole dish add bread crumbs, cheese parsley, pimentos & onion; add milk, butter, salt, pepper and stir well; add beaten egg and lastly add cooked macaroni.
Bake at 375º for 45 min. -1 hr.
Should be slightly browned on top.
To bake ahead, bake about 30 minutes and refrigerate or freeze
