Our take on a Philly Steak Sandwich

For each serving you need
5 ounces New York or other tender cut of meat, sliced thin.
You can use chicken or shrimp in place of the beef.
½ Poblano Chili match stick sliced
¼ sliced onion
1 clove minced garlic
Salt, pepper, or commercial Fajita seasoning mix to taste
Vegetable oil
¼ to ½ cup shredded Jack cheese
1 Mexican Bolillo or your favorite sandwich roll sliced leaving book hinge.

Pre-heat oven to 375

Season meat with salt and pepper or Fajita seasoning

Heat a small amount of oil in a frying pan and add the chili and onions sauté until just soft. Turn the heat to high and add the meat and garlic, cook, tossing beef to med or med rare depending on how you like it, chicken or shrimp until almost done but very moist and tender. Remove from heat. Open rolls and set on a rimmed cookie sheet. With tongs evenly proportion meat mixture into open roll covering both sides. Sprinkle with cheese and bake until cheese has melted and has started to brown. Serve it open with knife and fork or fold back over like a sandwich.
