2 12-Inch Pizza Crusts (See recipe "Pizza Dough")

1 Cup Shredded Mozzarella
2 Cups Whole Milk Ricotta Cheese
3/4 Cup Freshly Grated Parmesan Cheese
1 Egg, Slightly Beaten
1 Tablespoon Finely Chopped Flat-leaf Parsley
Freshly Ground Pepper
Olive Oil

Directions:
Directions:
Pre-heat Oven to 500 Degrees

In a bowl, combine the ricotta with parsley, 1/2 cup Parmesan and egg, season with freshly ground pepper.

Follow instructions for Pizza Dough. Once dough has risen on pan, dollop the ricotta mixture all over the pizza, leaving a 1-inch border of dough. Brush the border with the olive oil. Using the back of the spoon, spread the ricotta out to the border in an even layer. Top with mozzarella and the remaining Parmesan.

This Pizza is great with or without added toppings.

This is my husband's favorite meal! We often top it with fresh mushrooms, black olives and fresh jalapeņos.
