2 large Pork fillets (750g)
750g Kumara (sweet potato), thickly sliced
1 tablespoon seeded Mustard
2 tablespoons Honey
1 tablespoon Soy Sauce
4 shallots (thinly sliced)

Directions:
Directions:
Cut each pork fillet in half, Place the pork and kumara in a oiled baking dish. Pour over the combined mustard, honey and soy sauce, toss to coat pork and kumara in the honey mixture. Bake the pork and kumara uncovered, in a very hot oven (250ºC) for about 25 minutes, or until they are cooked through. Slice the pork and serve with the kumara, topped with the sliced shallots. Serve with steamed beans or snow peas.
