125g packet water crackers
2 eggs
1 cup skim milk
1 cup grated low fat tasty cheese
3 bacon rashers chopped
1 onion finely chopped

Directions:
Directions:
1. Grease an 18cm x 28cm slice pan. Line base and sides with baking paper, extending paper 2cm above edges.

2. Place 3/4 of a packet of water crackers into a snaplock bag. Reserve remaining crackers for other use. Lightly beat bag with rolling pin until crackers from coarse crumbs.

3. Combine eggs and milk in a large jug. Whisk together well. Add remaining ingredients. Stir well until combined. Pour mixture into prepared pan.

4. Cook in a moderate oven (180C) for about 30 minutes or until firm to touch. Allow to cool in pan.

5. Serve warm or cold cut into squares.
