1 lb. lean ground turkey meat
1 slice whole wheat bread, crusts removed and pulsed into crumbs in a food processor
1/4 c. freshly grated Parmesan
1/2 c. finely grated carrot
1/2 c. chopped onion
2 cloves garlic, minced
2 T. minced parsley
2 tsp. minced fresh thyme
1 large egg, beaten
1/2 tsp. salt

Directions:
Preheat the broiler and spray a baking sheet with cooking spray. Combine all the ingredients in a large bowl. If I don't have fresh herbs, I just use dry herbs and they still come out good. Directions suggest making 2 1/2 inch balls but I usually make them closer to 1 1/2 inches. Broil until browned about 10 minutes.
