1 lb. dried great northern beans
1 tbsp. olive oil
4 cloves garlic
2 onions (chopped)
1 tsp. cayenne pepper
2 tsp. ground cumin
2 tsp. chili powder
2 4 oz. cans of mild green chiles
2 c. cooked diced chicken
6 c. chicken stock

Directions:
Directions:
Place beans in large heavy pot and cover with water, three inches over the beans. Soak overnight.

Next day. Drain & rinse beans. Drain again & set aside.

In a separate pot, heat oil; add garlic & onions. Saute 10 minutes or until onions are soft.

Add cumin, chili powder, cayenne, and chiles. Stir well. Add chicken, stock, & beans.

Bring to a boil. Reduce heat & simmer until beans are tender, about two hours.

Season to taste with salt & pepper.

Serve with your choice of toppings: sour cream, salsa, shredded monterey jack cheese, chopped cilantro.
