This recipe for Spinach and Cheese Squares, by Susan Brown, is from Hanigan Taste of Home,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
2 Tabl butter 3 eggs 1 c flour 1 c milk 1 teas onion or garlic salt 1/2 teas pepper 1 teas baking powder 1/2 lb grated cheese (I like Monterey Jack) spinach, 4 c fresh chopped or l block frozen
If using frozen spinch, cook until thawed, squeeze out liquid, and chop. Melt butter in 9" x 13" pan. Beat eggs. Add flour, milk, salt, pepper, and baking powder. Add cheese and spinach mixing well. Pour into pan and bake at 350º for 35 minutes or until set. Cool at least 30 minutes before cutting. Cut into squares.
This is Susie's favorite appetizer or snack or lunch and one of the few ways she will eat spinach.
