4-5 carrots grated
4 Tbls melted butter
Filling -
1 tsp salt
Pinch of mojoram or oregano
4 Tbls grated Parmesan
Juice of 1/4 melon
2 Tbls chopped parsley

3 eggs beaten
1 cup heavy cream

In one baked 9" pie shell sealed with egg and brushed with mustard.

Grated carrot needs to boiled for one minute and then well drained and squeezed dry.

Mix together filling ingredients and put into prepared pie shell. Pour custard mixture over it.

Bake 40 minutes at 350.
