"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
2 lbs. Brie Cheese - room temp (I cut the rind off) 1/2 c. butter 1-1/4 c. packed brown sugar 2 tblsp. corn syrup 1/3 c. whipping cream 1 c, toasted pecans or walnuts
Melt butter over low heat, add brown sugar, corn syrup and cream stirring constantly. Bring to boil (not necessary to boil more than a second or two, or it will become hard). Pour over cheese and nuts.
