Ingredients: 2 ripe bananas, mashed 1/4 c. brown sugar 1/8 c. Splenda or granulated sugar 1/2 c. applesauce 1 egg 1/4 c. oil 3/4 c. whole wheat flour 1/4 c. almond meal 1/2 tsp. baking soda 1/2 tsp. salt 2 c. old fashioned oatmeal 1/2 c. toasted walnuts, chopped 1/2 c. toasted pecans, chopped 1/2 c. dried cranberry 1/2 c. dried apricots, chopped

Directions:Preheat oven to 350 degrees. Grease muffin pan or use paper liners.
Combine bananas, brown sugar, Splenda, applesauce, egg, and oil until oil is well incorporated. Add flour, baking soda, and salt until just mixed. Add oatmeal. Fold in fruit and nuts.
Fill muffin cups to the top--these won't rise much during baking. Bake at 350 for 25 minutes.
These muffins are best when they've been frozen and then defrosted in the microwave for about 15 seconds. I freeze the whole batch and defrost one every morning. |

Notes: You can add any kind of fruit or nut to these--or even chocolate chips. They say that chocolate is healthy in small amounts, right??
Sometimes I use agave syrup, a natural sweetener, instead of granulated sugar. When I do, I reduce the amount of applesauce by half and add a little extra almond meal so the batter is the right consistency.
