3 medium zucchini, thinly sliced
2/3 cup cider vinegar
1/2 cup shredded green pepper
1/2 cup shredded celery
1/2 cup chopped yellow onion
1/2 cup sugar
1/3 cup oil
1/4 cup Burgundy
2 Tbs red-wine vinegar
1 tsp salt
1/2 tsp freshly ground black pepper

Directions:

Combine all ingredients in a large bowl and mix thoroughly. Cover and refrigerate for at least 6 hours before serving. Will keep up to 2 weeks in the refrigerator. (?) Serves 6
