8- Tortillas
1/2 tsp. Vegetable Oil
2 Cloves Garlic, Minced
3/4 lb. Shrimp
1/2 tsp. Ground Cumin
1 large Onion
2 Tomatoes, Chopped
1 Jalapeņo Pepper, Seeded and Diced
1/4 C. Cilantro, Freshly Chopped
1/2 tsp. Salt
Sour Cream
Pepper Jack Cheese, Shredded

Directions:
Directions:
Saute garlic in oiled skillet, add shrimp and cumin. Cook until shrimp are pink. remove shrimp. Add onion and saute until tender, approximately 3 minutes. Add shrimp back in with tomatoes and pepper. Heat through, about 5 minutes. Remove from heat, stir in cilantro and salt. Evenly portion shrimp mixture onto tortillas and serve with garnished, dollop of sour cream and shredded pepper jack cheese.
