8 oz. package crab delights, finely chopped
1 c. cooked spaghetti
2 beaten eggs
1/4 c. fine dry bread crumbs
2 Tbsp. snipped fresh cilantro
2 tsp. olive oil
1/4 tsp. salt
1/4 tsp. pepper
2 Tbsp. cooking oil

Directions:

Break spaghetti into 1 in. pieces, cook according to package. Set aside. In a large mixing bowl combine the eggs, bread crumbs, cilantro, olive oil, salt, and pepper. Add crab delights and spaghetti; mix well. Using about 2 Tbsp. of mixture for each crab cake, shape into 12 patties, about 1/2 in. thick. In a large, heavy skillet heat the 2 Tbsp. cooking oil (add a little more oil if necessary during cooking). Over medium heat, cook the patties, a few at a time, about 3 min. on each side or till golden brown. Drain on paper towels. Keep in a warm oven, covered, while preparing remaining cakes.
