4 large eggs
1/4 cup milk
1/4 tsp salt
1/4 tsp baking powder
1/8 tsp pepper
1 T margarine or butter

suggested fillings: crumbled bacon, sausage, ham, mushrooms, green and red bell peppers, cooked broccoli, onions, cheese

Separate eggs. Beat egg whites until stiff but not dry. Blend yolks with milk, salt, baking powder and pepper. Gently fold yolk mixture into beaten egg whites.
Melt butter in 9 inch pie plate 25- 30 seconds. Pour in egg mixture. microwave at 50% power for 3-5 minutes. Eggs will only be partially set. Lift edges gently with spatula so uncooked egg spreads evenly. Microwave 2-3 minutes until center is almost set. Sprinkle desired filling over half of omelet. Fold in half using spatula. Cook for 1 minute more.
